Friday Top 5: Pumpkin Recipes

Now that it's officially fall, it's time for fall baking and in my kitchen, that means adding pumpkin to as many things as possible! I'm stocked up on canned pumpkin and ready to try as many recipes as I can.

1. Pumpkin chocolate chip oatmeal bars This is one of those recipes that you probably already have all the ingredients for. The best part is they're surprisingly healthy: no butter or oil! They're a great mid-morning snack with coffee. Just saying!2. Pumpkin oatmeal I've already made this recipe from The Craving Chronicles twice this week. And the ingredients are sitting out on the counter ready for me to make again this morning! It's so quick and tasty and the smell is out of this world! It's also a great way to use leftover pumpkin from recipes that only call for a cup of canned pumpkin. I also want to try this recipe for baked pumpkin oatmeal from Annie's Eats. Maybe this weekend!3. Pumpkin pancakes Trader Joe's has a good pumpkin pancake mix, but I prefer to make mine from scratch. I'm kind of on a breakfast kick with my pumpkin recipes, but I've also made pumpkin ricotta stuffed shells and other savory things.4. Pumpkin snickerdoodles I haven't made these yet, but don't they sound amazing? 5. Pumpkin cornbread Who doesn't like cornbread? This recipe from Tasty Kitchen adds pumpkin to the mix and it's even better!

Hopefully Adam doesn't get sick of pumpkin! It's full of Vitamin A, Vitamin C, and iron! Too bad most of these recipes also include butter and brown sugar. It's a fair trade, right?
