When we first started the blog we thought it would be fun to include recipes. We quickly decided that cooking isn’t our strong point, so we dropped that feature. There are far too many fabulous food bloggers out there for us to compete with!
But, that doesn’t mean we don’t cook. We just use other people’s recipes! I’ve discovered a few recipes in the last couple weeks that are too good (life changing even) not to share!
1. 5-minute artisan bread. I realize I’m late to jump on the bread-making bandwagon, but I’m on it now! I love homemade bread, but I don’t have the patience or time to make it. Enter this recipe. You really can make the dough in 5 minutes and enjoy it for up to 2 weeks. Try it. I guarantee you’ll impress your husband. Adam was raving about my fancy loaves! I’ve only made the original recipe, but there are several books full of recipes that I’d love to try.
2. Crock pot chicken. This will change your life! OK, that might be a little dramatic, but seriously, go buy a whole chicken, rub some spices on it, and leave it in the crock pot for 8 hours. It’s AMAZING! Are you noticing a theme? I’m all about simple recipes that taste delicious.
3. Baked oatmeal. This recipe has made its way around blogs, but it’s worth sharing again in case you haven’t tried it. I love making this on Saturday morning and enjoying it the next few days. The recipe is from Heidi Swanson’s Super Natural Every Day cookbook (which I own and highly recommend), but it’s been repeated on lots of blogs, so I don’t feel bad sharing it.
4 . Southwest crockpot chicken. Another crockpot recipe. This one from Iowa Girl Eats. If you don’t read this blog, add it to your Google Reader. I’ve made a lot of her recipes and never been disappointed. I actually made this Wednesday night. It’s a staple in our house. If you serve it over rice it’s better than a Chipotle burrito bowl. I’m not kidding!
5. Pancakes. Who doesn’t love pancakes? Breakfast for dinner is a regular occurrence in the Cooley house and usually it involves these pancakes. A good friend introduced me to this made-from-scratch-recipe a few years ago and I’ve never bought a box of pancake mix since. It’s so simple and I swear the pancakes taste better than the ones from a box.
Side note: Tuesday is Pancake Day (also known as Fat Tuesday). It’s a favorite tradition in our house. It started in college when a roommate spent a semester in London and discovered this wonderful holiday and brought it back to Des Moines. Its grown into an event that is celebrated across the country! Join the party this Tuesday. I promise if you tell people you’re making pancakes they’ll show up! We provide the pancakes and everyone else brings toppings. This year we’re going to try something called the ultimate breakfast pancake. It is bacon, sausage and eggs mixed into the pancake batter.
